‘HACCP’ stands for Hazard Analysis Critical Control Points, and is a food safety program based on risk assessment theory and practice. HACCP was initially developed in the 1960s by NASA to ensure that Astronaut food was safe.
Today, HACCP principles form the basis of Food Safety Programs that are accepted worldwide. HACCP principles can be applied to processes throughout every stage of the food supply chain, including production, preparation, packaging and distribution, and are used to manage food safety across many different types of food businesses.
A HACCP Food Safety Program is a legal requirement (check with your local Council or State food authority to determine the local 'letter of the law')
For most food businesses in Australia, having a Food Safety Program based on the principles of HACCP is a legal requirement. Standard 3.2.1 of the Food Standards Code<https://www.legislation.gov.au/Details/F2011C00551> (‘the Code’) enables: “States and Territories to require food businesses to implement a food safety program based upon the HACCP concepts. The food safety program is to be implemented and reviewed by the food business, and is subject to periodic audit by a suitably qualified food safety auditor.”
Good food businesses will download our templates, HACCP guidance and complete our HACCP training which will help them develop an effective Food Safety Program. This includes documented evidence that all food preparation steps and activities have been identified. When an Environmental Health Officer (EHO) audits your food business, they will review your Food Safety Program and its records.
